Ancient Egyptian Recipe-Ful Medammes

Ful medammes is a dish made of fava beans marinated in lemon juice, garlic, and olive oil.

The dish is a popular street food in Egypt and is traditionally served for breakfast,

smeared on pita bread slices with some hard boiled eggs.

It’s very flavorful and filling.

1 lb. dried fava beans
3/4 clove garlic, chopped
3 tbsp olive oil
1/4 c. lemon juice
3/4 tsp. salt
1 tsp. chopped fresh parsley

  • Boil fava beans for 1 to 2 hours over medium heat or until tender.
  • Drain water.
  • Add salt, lemon juice, and garlic.
  • Mix well.
  • Pour in bowl and garnish with parsley and olive oil.
  • If desired, garnish with pickled onions and sliced hard boiled eggs.
