PEAR PINEAPPLE PRESERVES
Absolutely scrumptious on toast in the morning or as a topping on ice cream!
4 cups pears, peeled, cored, mashed
10 oz can crush pineapple
1 1/2 tbsp lemon juice
1 pkg fruit pectin, powdered
4 1/2 cups sugar
Mash pears and add pineapple and pour into saucepan.
Stir in pectin. Bring to a boil over high heat, stirring constantly. Add sugar and stir to dissolve.
Return to rolling boil and boil for 1 minute, again, stirring constantly. Skim foam off top and ladle into sterilized jars to within 1/8” from top of jar.
Clean rim, place lids and tighten rings.
Process in a boiling water bath for 5 minutes for 1/2 pints or 10 minutes for pints.
